Bacon Blue Guacamole

Ingredients for 2-4 servings

2 ripe avocados
1 lime, juiced
1 clove garlic, peeled and minced
salt and freshly ground black pepper to taste
1/4 cup (60 mL) fresh cilantro, washed and finely chopped
1 fresh roma tomato, diced
hot sauce to taste (optional)
1/4 cup (60 mL) Castello® Noble Blue Cheese broken into bite-sized pieces
5 slices bacon, cooked until crisp and broken into bite-sized pieces

Bacon Blue Guacamole


Cut open avocados, remove pit and scoop inside into a large bowl. Add lime juice, garlic, salt and pepper and mash gently.

Add cilantro, tomato and hot sauce to taste; stir carefully to combine. Top with Blue Cheese crumbles and bacon pieces.
