Bellini with Double Crème White & marinated peaches

Ingredients
Bellini
210 ml prosecco
6 tbsp. or 90 ml peaches puree
2 - 4 raspberries optional
Marinated Peaches
2 sun ripe peaches
¼ thinly sliced red onions
20 fresh mint leaves
1 tbsp olive oil
pinches sea salt
1 tsp of chilli flakes optional
Preparation
Bellini
To make the bellini, pour the peach puree into two champagne glasses and carefully top with Prosecco. Drop in a couple raspberries.
CREAMY WHITE & MARINATED PEACHES
Remove the stone and slice the peaches. Toss the peach slices with the rest of the ingredients.
