BLT Salad on Toasted Baguette with Castello® Blue Cheese

ingredients

Dressing

  • 3 tbsp olive oil
  • 2 tbsp rice wine vinegar
  • Coarse salt & pepper

Salad

  • French baguettes
  • basil or tomato pesto
  • Pinch of salt
  • Castello® Traditional Crumbled Danish Blue
  • 6 capri tomatoes, sliced
  • 4 slices bacon, cooked until crispy and chopped
  • 2 cups baby greens

preparation

1. Prepare the dressing by whisking together the olive oil and vinegar; set aside.   

2. Cut the baguette in half lengthwise and spread both sides with pesto.

3. Add a pinch of salt and sprinkle on half of the Castello® Traditional Crumbled Danish Blue cheese.

4. Place under a hot broiler and toast.

5. Arrange the baguette halves on serving plates and layer with tomato slices and bacon.

6. Toss greens with dressing and place on top.

7. Sprinkle with the remaining cheese.
