Carpaccio of Pear with Lacy Greens & Crumbled Blue

Dressing

olive oil
sherry wine vinegar
Salt & pepper to taste

Salad

2 ripe pear
fresh lemon juice
6 cups greens such as baby arugula, watercress, or baby romaine lettuce
walnuts pieces

Preparation

Preparation

Whisk the olive oil and vinegar together.

Season with salt and pepper; set aside.

Using a mandolin, slice the pears lengthwise and place them in a shallow pan; coat with lemon juice.

Arrange the pear slices on a plate.

Toss the salad greens with the dressing and arrange in a pile alongside the pear.

Add a sprinkling of walnuts and blue cheese.

Serve immediately.
