Castello® Blue Cheese ‘Lollipops’

mascarpone
12 pitted dates, minced
shallots, minced
freshly grated lemons rind
fresh lemon juice
ground white pepper
pinches salt
chopped pecans, toasted
pretzel sticks
3/4 cup 175 mL Tre Stelle® Mascarpone

Preparation
In a medium bowl, beat together Blue Cheese, Mascarpone,dates, shallot, lemon rind and lemon juice.
Cover andrefrigerate 1 hour.
Moisten hands with water and shape into 1” balls, roll intochopped pecans, press lightly so nuts adhere and refrigerateuntil ready to serve.
Prior to serving, insert a pretzel stick intothe top of each ball.

Try using an assortment of toasted chopped nuts orfinely chopped fresh herbs to roll the cheese balls into.
