
Castello® Blue Cheese ‘Lollipops’

Ingredients
- 1 pkg 125 g Castello® Traditional crumbled danish blue
- mascarpone
- 12 pitted dates, minced
- shallots, minced
- freshly grated lemons rind
- fresh lemon juice
- ground white pepper
- pinches salt
- chopped pecan nuts, toasted
- pretzel sticks
- 3/4 cup 175 mL Tre Stelle® Mascarpone
Preparation
Preparation1. In a medium bowl, beat together Blue Cheese, Mascarpone,dates, shallot, lemon rind and lemon juice.
2. Cover andrefrigerate 1 hour.
3. Moisten hands with water and shape into 1” balls, roll intochopped pecans, press lightly so nuts adhere and refrigerateuntil ready to serve.
4. Prior to serving, insert a pretzel stick intothe top of each ball.

Try using an assortment of toasted chopped nuts orfinely chopped fresh herbs to roll the cheese balls into.
