Castello® Blue Cheese ‘Lollipops’

Ingredients for 1 serving

1 pkg 125 g Castello® Extra CreamyBlue Cheese, crumbled

3/4 cup 175 mL Tre Stelle® Mascarpone

12 pitted dates, minced

1 tbsp 15 mL shallot, minced

1 tsp 5 mL freshly grated lemon rind

1/2 tsp 2 mL fresh lemon juice

1/2 tsp 2 mL ground white pepper

pinch salt

1 1/2 cups 375 mL chopped pecans, toasted

36 pretzel sticks

In a medium bowl, beat together Blue Cheese, Mascarpone,dates, shallot, lemon rind and lemon juice. Cover andrefrigerate 1 hour .Moisten hands with water and shape into 1” balls, roll intochopped pecans, press lightly so nuts adhere and refrigerateuntil ready to serve.
