  • 1 courgette in thick slices
  • 2 yellow pepper in broad strips
  • 4 tomatoes halved
  • 4 red onions halved
  • 1 large, finely chopped garlic clove
  • 1½ tbsp finely chopped thyme leaves
  • 2 tbsp olive oil
  • ¾ tsp coarse salt
  • freshly ground pepper
  • 200 g white cheese cubes (Greek-style cheese)

Preparation

1. Grill the vegetables on all sides in a hot barbecue or grill pan, approx. 5 min. for the tomatoes, and approx. 10 minutes for the other vegetables, or until they are tender and have lovely sear marks (or approx. 8 min. on the oven’s grill setting).

2. Combine the garlic, thyme, oil, salt and pepper, and coat the grilled vegetables in the marinade. Drain the white cheese block in a sieve and pat dry. Carefully stir the cheese into the warm vegetables and serve.
