
Grilled vegetables with Greek-style cheese, garlic and thyme
A beautiful, rustic side dish - our recipe for Grilled vegetables with garlic and thyme is a lovely companion for almost anything. The rich flavours from the charred vegetables go really well with the savoury flavours from the garlic and thyme oil. Let the salad cheese add a salty finish. Fast, fresh and full of taste.
ingredients
- 1 courgette in thick slices
- 2 yellow pepper in broad strips
- 4 tomatoes halved
- 4 red onions halved
- 1 large, finely chopped garlic clove
- 1½ tbsp finely chopped thyme leaves
- 2 tbsp olive oil
- ¾ tsp coarse salt
- freshly ground pepper
- 200 g white cheese cubes (Greek-style cheese)

Preparation1. Grill the vegetables on all sides in a hot barbecue or grill pan, approx. 5 min. for the tomatoes, and approx. 10 minutes for the other vegetables, or until they are tender and have lovely sear marks (or approx. 8 min. on the oven’s grill setting).
2. Combine the garlic, thyme, oil, salt and pepper, and coat the grilled vegetables in the marinade. Drain the white cheese block in a sieve and pat dry. Carefully stir the cheese into the warm vegetables and serve.
