1. Place Tre Stelle® Mascarpone and Castello® Extra Creamy Danish Blue Cheeses, orange rind and cranberries in a food processor fitted with a metal blade; pulse on and off just until combined.
2. Pour mixture onto a sheet of plastic wrap and gather to create a log approximately 6” (15 cm) long.
3. Sprinkle pecans on a separate piece of plastic wrap.
4. Roll log mixture evenly onto nuts and re-wrap in plastic wrap.
5. Refrigerate until ready to serve. Serve with crackers and crisp bread – great on its own or as an addition to a cheese tray.
