50 g almonds
250 g fresh spinach
1 garlic clove
olive oil
lemon juice
salt

Rinse the fresh spinach leaves and add to blender with almonds, garlic and Castello® Tickler Extra Mature Cheddar.
Pulse lightly to blend, and gradually add the olive oil to get a slightly chunky texture without puréeing the pesto.
Season with lemon juice and salt and pepper.
