- 50 g almonds
- 250 g fresh spinach
- 50 g Castello® Tickler™ extra mature cheddar
- 1 garlic clove
- olive oil
- lemon juice
- salt
- pepper
preparation
Preparation1. Rinse the fresh spinach leaves and add to blender with almonds, garlic and Castello® Tickler Extra Mature Cheddar.
2. Pulse lightly to blend, and gradually add the olive oil to get a slightly chunky texture without puréeing the pesto.
3. Season with lemon juice and salt and pepper.
