Spinach pesto with Tickler Extra Mature Cheddar

ingredients

  • 50 g almonds
  • 250 g fresh spinach
  • 50 g Castello® Tickler Extra Mature Cheddar
  • 1 garlic clove
  • olive oil
  • lemon juice
  • salt
  • peppers

preparation

1. Rinse the fresh spinach leaves and add to blender with almonds, garlic and Castello® Tickler Extra Mature Cheddar.

2. Pulse lightly to blend, and gradually add the olive oil to get a slightly chunky texture without puréeing the pesto.

3. Season with lemon juice and salt and pepper.
