ingredients

  • 3½ ounces gherkins
  • 12¼ ounces Castello® Castello® Extra Mature Cheddar, diced
  • 2⅘ ounces pickled beetroots
  • 1¾ ounces cleaned frisee salad
  • 2 tbsp olive oil
  • 1 tbsp apple vinegar
  • salt
  • black pepper

Serve with:

  • bread
  • 4 tbsp coarse mustard

preparation

1. Place the Extra mature Cheddar on a platter with gherkins, pickled beets and duck rillettes.

2. Toss the salad with oil, vinegar, salt and pepper. Arrange the salad on a dish.

3. Serve with bread and mustard.
