ingredients

  • 7 oz Castello® Havarti creamy, shredded
  • 2 cups Barilla Gluten Free Rotini pasta
  • 1 tsp salt
  • 1 tsp extra virgin olive oil
  • 6-8 ounces jerk chickens – SEE SUB RECIPE
  • 1 tbsp butter
  • 3 ounces double cream
  • 1 tsp garlic
  • 2 tbsp pepper jack, shredded
  • 2 tbsp parmesan cheese cheese, shredded
  • 1 tbsp Old Bay seasoning
  • 1 tbsp spanish oregano
  • 3 cups water

Jerk Chicken Ingredients

  • 2 6-8 ounce boneless chicken breasts halves without skin
  • 1 tbsp Old Bay seasoning
  • 1 tsp black pepper
  • 1 tbsp chopped fresh herbs (chopped garlic, thyme, parsley, rosemary) (Optional)
  • 1 tbsp olive oil
  • ¼ cup apple apple cider vinegar
  • 4 tbsp cold butter, cut into small pieces
  • 2 tbsp of Walker-wood mild Jerk sauce
  • 1 tbsp chicken broth broth (or water), if needed to thin sauce

1. To make the pasta bring 3 cups of water to a rapid boil. Add salt, extra virgin olive oil, gluten free pasta until al dente or 8 minutes. Once pasta is al dente, rinse with hot water for 3 - 5 minutes. Drain and allow pasta sit for 5 minutes to dry.

2. In a separate bowl, add butter, cream, shredded CASTELLO® Creamy Havarti Cheese, chopped garlic, shredded pepper jack and parmesan cheese, Old Bay seasoning and Spanish oregano. Cook the sauce until it’s nice and thick, stirring the sauce so it doesn’t burn at the bottom.

3. Combine half of the cheese sauce with cooked pasta and transfer mac and cheese to a baking dish. Bake at 425 for 10 mins or until lightly brown. Continue to keep remain sauce warm.

4. Remove pasta from oven and plate. Top Mac and cheese with sliced jerk chicken and pour remain cheese sauce over dish.

5. Serve immediately.

Jerk Chicken Directions

1. Season chicken on both sides with Old Bay and pepper.

2. Heat olive oil in a heavy skillet over medium-high heat until it starts to shimmer. Place chicken breasts in skillet skin side down. Sprinkle with fresh herbs. Do not disturb the breasts until the skin side sears, 5 or 6 minutes.

3. Turn chicken. Cook until internal temperature reaches 150 degrees, for about 5 minutes.

4. Add jerk sauce, vinegar and butter to pan with chicken. Shake pan gently until butter melts and internal temperature of chicken reaches 160 to 165 degrees, 2 to 3 minutes more. Add a splash of chicken broth or water if sauce needs to be thinned.

5. Let chicken cook for 10 mins and slice julienned style.
