Egg muffins with cheddar

A beautiful way to start the day – our recipe for Egg muffins with cheddar can make any breakfast or brunch table look stunning. The eggs and cheese will give the muffins a lovely texture and a rich taste, whiles the onions, lettuce and cress will give your dish a crispy bite. A good morning indeed.

  • 3½ ounces plain cream cheese 25%
  • ½ cup whipping cream 38%
  • 4 eggs
  • 3½ ounces finely grated Castello® Extra Mature Cheddar
  • 1 tsp coarse salt
  • 8 slices smoked turkey breast
  • 1 smoked turkey breast red onion
  • 2⅗ ounces mixed lettuce leaves
  • 2 tbsp cress
  • 2 tsp rapeseed oil
  • freshly ground pepper


1. For the egg muffins: Lightly whip the cream cheese with the cream, then beat in the eggs. Add the grated Extra Mature Cheddar and salt.

2. Line 8 greased muffin cups with the turkey slices, then fill with the egg mixture.

3. Bake the 8 muffins in the middle of the oven for 20-25 min. at 400°F (conventional oven), then cool in the pan. Carefully remove them from the pan.

4. Combine the red onions and lettuce in a bowl. Add the cress, then gently toss with oil and pepper. Serve with the warm muffins.
