Grilled Chicken with Edam Cheese and Avocado Salsa

ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • salt and pepper, to taste
  • 4 oz Castello® Edam cheese, sliced
  • 1 jumbo avocado, diced
  • ½ cups chopped tomatoes
  • ¼ cups chopped red onions
  • ¼ cups chopped fresh coriander

preparation

Preheat the grill. Meanwhile, season the chicken all over with garlic powder, onion, paprika, salt, and pepper. Grill for 6 minutes on each side. During the last 2 minutes of cooking, top the chicken with slices of Castello Edam Cheese to allow it to melt.

Remove the chicken from the grill and top with avocado, tomatoes, red onion, and cilantro. Serve immediately.
