Grilled Peach Flatbread

Ingredients

4 portions

Spicy Garlic Pesto Ingredients:

2 garlic cloves
½ lemons
½ cups chopped fresh parsley
½ chopped jalapeño chillies
⅕ tsp sea salt
¼ cups olive oil
Handful pine nuts (optional)

Grilled Peach Flatbread Ingredients:

1 yellow peach
1 flatbread of choice (store-bought)
Spicy Garlic pesto
rocket
Hot honey
walnuts (optional)

Preparation

For Spicy Garlic Pesto: 1. In a blender add your garlic, chopped parsley and jalapeño and blend.

Once it’s roughly blended, add juice of 1/2 a lemon, olive oil, sea salt and pine nuts (optional)

Blend again till the pesto is in smooth consistency

Store in an airtight jar

For Grilled Peach Flatbread:: 1. Grill slices of the peach til there are grill marks, remove quickly and place on a cooling rack

Cut your flatbread into squares and spread the Spicy Garlic Pesto

Shred some Castello Creamy Havarti Cheese and place your grilled peaches on the flatbread

Bake the flatbread til the cheese is melted at 350 degrees

Add fresh arugula and walnuts

Drizzle some hot honey

Shred some more cheese and serve hot!
