Mexican-style sliders

Inspired by Mexican culinary culture – our recipe for Mexican-style sliders puts an exciting twist on classic burgers in a blend of distinct contrasts. Adding depth by way of heat and hints of fresh lime, a dash of homemade sweetcorn salsa rests on top of beef patties, mozzarella and avocado purée.

ingredients

Corn salsa

  • 8¾ ounces cooked corn kernels
  • 8¾ ounces cocktail tomatoes
  • 1 green pepper
  • 1¾ ounces raisins
  • 2 - 3 tbsp finely chopped red chillies
  • 3 tbsp chopped fresh coriander leaves
  • 3 tbsp freshly squeezed lime juice
  • ½ tsp coarse salt

Burgers

  • 10½ ounces beef mince
  • 7 ounces grated mozzarella 15%
  • ½ tsp coarse salt
  • 12 small slider burger buns
  • 1 ripe avocado
  • 1 tbsp freshly squeezed lime juice
  • 1¾ ounces finely shredded romaine lettuce
  • ¾ cup fresh coriander leaves

preparation

Corn salsa

1. Combine the corn kernels, diced tomatoes and the rest of the ingredients. Cover and refrigerate the salsa for at least 15 min. Season to taste.

Burger patties

2. Heat up a grill pan nice and hot. Combine the ground meat with the cheese and salt. Form the meat into 12 mini-patties (2-3 inches in diameter) and grill for approx. 2 minutes on each side.

3. Slice open the buns and place them cut-side up on a parchment-lined baking sheet. Place a grilled patty on each top bun. Toast the buns and patties in the oven on the top rack.

4. Remove the skin and pits from the avocado and mash it with lime juice.

5. Place a spoonful of mashed avocado on each toasted bottom bun.

6. Layer lettuce, cilantro leaves and a little salsa on top, then top with the burger patty and the top bun.

7. Serve immediately with the rest of the corn salsa.
