Peach and Blue Cheese Toast

Peach and Blue Cheese Toast


  • 2 tbsp butter, softened
  • 1 loaf rustic bread, sliced into ¾ inch thick slices
  • 4 ounces Extra Creamy Castello® Danish blue cheese
  • ½ tsp ground italian seasoning
  • 2 tbsp butter, softened
  • 2 peaches, pitted and sliced
  • 2 tbsp almonds, chopped
  • 1 tbsp fresh sage leaves, chopped
  • 2 tbsp honey
  • freshly cracked black pepper, to taste


Preheat your oven to 425 F. Meanwhile, spread the butter over each slice of bread and arrange on a baking sheet. Then bake for 12-14 minutes, flipping halfway through, until the bread is toasted golden. Remove from the oven and set aside.

In a small bowl, combine the Castello Extra Creamy Danish Blue Cheese, remaining softened butter, and Italian seasoning. Mix well.

To assemble the toast, spread a generous 2 Tbsp of the mixture on each slice of toast. Then top with a few peach slices, a sprinkle of chopped almonds and sage, and a drizzle of honey. Finish with black pepper if desired and enjoy.
