Pizza dough

  • ½ ounce yeast
  • 1¼ cups water
  • 1½ tsp runny honey
  • 1 tsp coarse salt
  • 2 tbsp olive oil
  • 4½ ounces durum flour
  • 11⅖ ounces italian wheat flour, tipo 00
  • 6.1 ounces red bell peppers in small cubes
  • 6.1 ounces mozzarella cubes
  • 3½ ounces chorizo sausages in smaller pieces
  • 1⅗ ounces green olives in brine, thinly sliced
  • 1 small, finely chopped garlic clove
  • 2 tbsp finely shredded fresh basil leaves
  • freshly ground pepper

Side dish

  • 15¾ ounces green mixed lettuce leaves


1. For the pizza dough: Dissolve the yeast in the water. Add the oil, honey, salt and flour (reserve some of the flour for later).

2. Knead the dough until smooth and elastic, then cover and let rise for approx. 2 hours.

3. Combine the bell peppers, cheese and the other ingredients in a bowl.

4. Divide the dough into 2 pieces and roll each one into a rectangle (approx. 10 x 16 inches).

5. Spread the filling on the 2 pizzas – stopping just below the top edge on the long side.

6. Roll each pizza up and place them, seam-side down, on a baking sheet lined with parchment.

7. Bake the pizza rolls in the middle of the oven for approx. 15 min. at 400°F (fan setting). Serve hot with a green salad.
