
Smoked Gouda Choripan (Chorizo Sandwiches)
ingredients
- 4 chorizo links, split in half lengthwise
- 7 oz Castello® Smoked gouda, sliced
- 4-6 inch Crusty Rolls. E.g. crusty french baguettes
- 2 tbsp chopped fresh parsley
- 2 tbsp chopped fresh coriander
- ½ white onions, minced
- 1 garlic clove, minced
- ¼ cups red wine vinegar
- 3 tbsp extra virgin olive oil
- ½ tsp paprika
- ½ tsp salt
- tsp black black pepper
preparation
First, make the chimichurri by combining the parsley, cilantro, white onion, garlic, red wine vinegar, olive oil, paprika, salt, and pepper in a small bowl. Mix to combine and set aside.
Preheat the oven to 350 degrees. Meanwhile, grill the chorizo sausage links over medium-high heat until charred on the outside and cooked through on the inside. Remove from heat when done and set aside.
Assemble the sandwiches by placing the sausages in the rolls topped with 1 ½ to 2 oz of Castello Smoked Gouda. Wrap each roll tightly with aluminum foil and place in the oven on a baking tray for 10-15 minutes until the sandwiches are warm and toasty and the cheese is melted.
Top each sandwich with 1-2 tablespoons of chimichurri and enjoy while they are warm.
