8¾ oz fresh spinach
1¾ oz Castello® Extra mature cheddar
1 garlic clove
olive oil
lemon juice
salt

Rinse the fresh spinach leaves and place in a blender along with the almonds, garlic and Extra Mature Cheddar.
Pulse lightly to blend, gradually adding olive oil until you have a slightly chunky texture without pureeing the pesto.
Season with lemon juice, salt and pepper.
