  • 1¾ ounces almonds
  • 8¾ ounces fresh spinach
  • 1¾ ounces Castello® Extra Mature Cheddar
  • 1 garlic clove
  • olive oil
  • lemon juice
  • salt
  • pepper


1. Rinse the fresh spinach leaves and place in a blender along with the almonds, garlic and Extra Mature Cheddar.

2. Pulse lightly to blend, gradually adding olive oil until you have a slightly chunky texture without pureeing the pesto.

3. Season with lemon juice, salt and pepper.
