- 8¾ oz fresh spinach
- 1¾ oz Castello® Extra mature cheddar
- 1 garlic clove
- olive oil
- lemon juice
- salt
- pepper
preparation
Preparation1. Rinse the fresh spinach leaves and place in a blender along with the almonds, garlic and Extra Mature Cheddar.
2. Pulse lightly to blend, gradually adding olive oil until you have a slightly chunky texture without pureeing the pesto.
3. Season with lemon juice, salt and pepper.
