Beef Chilli with Blue

  • 1 large onion - peeled and chopped
  • 2 tbsp oil
  • 1 green chili - finely chopped
  • 500 g ground beef
  • 200 g chorizo sausages - diced
  • 1 can tomatoes - chopped
  • 2 tsp chili powder
  • 350 ml beef stock
  • 1 can kidney beans - drained and rinsed
  • 1 pack Castello® Traditional Danish Blue
  • fresh coriander to serve


1. Fry onion in a large pan in the oil until tender, then add meat and brown quickly, add chorizo and do the same.

2. Then stir in chilli (fresh and dried), oregano, tomatoes and just over half of the beef stock, bring to boil stirring well.

3. Reduce heat and simmer for at least 60 mins, checking regularly and if necessary adding more stock.

4. Add kidney beans and cook for further 10 mins then serve in bowls with cheese crumbled on top and just stirred through, then topped with chopped, fresh coriander.
