Blueberry Fritters with Blue Cheese and Apple Sauce

Ingredients for 15-18 servings

250 mL (1 cup) water 50ml (3½ tbsp) butter
25 mL (2 tbsp) caster sugar125ml (½ cup) plain flour
30 mL (2 tbsp) ground almonds
3 eggs

150 g (approx.2/3 cup) fresh blueberries

65 g (½ of pack) Castello® Traditional Danish Blue Cheese, crumbled

Oil for frying

Sauce: (optional)Remaining Castello® Traditional Blue Cheese
100 g (1/3 cup) blueberries
Sugar to taste

Blueberry Fritters with Blue Cheese and Apple Sauce


Place water in a medium sized pan with the butter and heat to boiling, remove from heat and quickly stir in the flour, beating well until it binds together. Allow pan to cool slightly (you should be able to place your hands on the outside of the pan).

Beat in the eggs one at a time, then the sugar, almonds and finally fold in the blueberries and crumbled Blue Cheese. 

Heat sufficient oil in a deep pan to deep fry the fritters.

Drop large teaspoonfuls of the fritter mix into the hot oil (you will be able to cook 4-5 fritters at a time) and fry until they puff up and turn golden brown. Remove with a slotted spoon and continue to cook off the remaining batter. Drain on paper towel and serve dusted with icing sugar if desired or with the blueberry sauce.

Sauce: While the fritters are cooking, place blueberries in a pan with sufficient water to cover and 2-3 tbsp. caster sugar, bring to a boil and simmer until fruit is soft, stir in the remaining Blue Cheese and serve with the hot fritters.
