1. Using the olive oil, gently sauté the onion, garlic and chilli until just tender.
2. Add a little more oil and then the prawns and cook, stirring occasionally, until they have turned pink.
3. Finally add approximately half of the cheese (or more to suit taste), and season with lime zest and juice.
4. Serve with diced or sliced avocado and roughly chopped coriander leaves.
