Bacon Blue Cheese Salad


  • 2 ounces Castello® Danish blue cheese, crumbled
  • 4 cups mixed baby greens
  • 2 tbsp bacon bits
  • ¼ cup fresh blueberries
  • ¼ cup diced cucumbers
  • 2 tbsp dried cranberries
  • 2 tbsp toasted pumpkin seeds (or nuts or seeds of your choice)
  • poppy seeds
  • salt to season and dressing of your choice


Run a knife through the baby greens so that it is in bite-sized pieces. Plate the baby greens on two large but shallow bowls. Top with remaining ingredients.

Drizzle on dressing. Enjoy.
