Blue cheese, bacon and cranberry stuffed mushrooms

ingredients

  • 16 oz whole baby bella mushrooms
  • 5 oz Castello® Castello® Extra Creamy Danish Blue, Crumbled
  • ⅛ cup sliced almonds
  • ⅛ cup dried cranberries
  • ¼ cup bacon bits
  • ¼ cup green onions, tops only- sliced

preparation

1. Remove and discard stems from mushrooms and clean.

2. Add blue cheese, almonds, cranberries, bacon bits and green onions to a small bowl and stir to mix.

3. Place mushrooms in a 9 x 11 baking pan and fill with blue cheese mixture.

4. Bake at 350 for 18-20 minutes.
