
Blue Cheese with chorizo, pear and chili-lime syrup
A vivid marriage of contrast and texture - Our recipe for blue cheese with chorizo, pear and chili-lime syrup is a wonderful marriage of contrasting flavors and textures. Chorizo and green chilies provide a smoky heat, in contrast with the fresh pear and lime, all sitting alongside sharp blue cheese.
ingredients
Lime/chili syrup:- finely grated zest of 1 lime fruit
- ⅕ cup freshly squeezed lime juice
- ⅖ cup sugar
- ⅖ cup water
- 1 tsp finely chopped green chillies
- 7 oz chorizo cut into slices
- a little oil
- ground pepper
- 1 pear cut into thin wedges
- fresh tarragon
- green chillies
preparation
Preparation1. Mix the lime zest, juice, sugar, water and chili together and bring them to a boil in a saucepan.
2. Cook over medium heat for about 5 min. or until there is approximately 1 dl. of syrup left.
3. Sift the syrup in a bowl and set it in the fridge for about ½ hour.
4. Toast the chorizo sausage in a hot pan with a little oil until lightly crispy, grinding pepper over.
5. Arrange the warm sausage slices on plates with fresh pear and chili / lime syrup.
6. Sprinkle with cheese and fresh tarragon and a little green chili on top.

Tips & tricks
You can serve it with wholemeal bread, grissini sticks or small sweet pancakes.
