Buffalo Chicken Dip with Blue Cheese

ingredients

  • 2 tsp minced garlic
  • 1 tbsp unsalted butter
  • 2 cups cooked chicken, shredded
  • ¾ cup barbeque sauce
  • 8 oz cream cheese, softened
  • ¼ cup ranch sauce
  • ¼ cup shredded white cheddar cheese
  • ½ cup cup shredded sharp cheddar cheese
  • 4 oz Castello® Crumbled blue Cheese
  • 2 tsp chives, chopped
  • Castello® Havarti cheese crisps
  • Castello® Gouda cheese crisps
  • celery sticks
  • carrots sticks
  • tortilla chips

preparation

Preheat the oven to 375°F. In an 8-inch cast-iron skillet (or an ovenproof pan), melt the butter over medium-high heat. Sauté garlic until fragrant (30 seconds). Add the chicken and hot sauce and simmer until the sauce starts to thicken.

Remove from heat and stir in the softened cream cheese; mix until combined. Stir in the ranch dressing and top with both cheddar cheeses and half of the Castello Blue Cheese Crumbles.

Bake until bubbling around the edges and the cheese has melted (about 10 minutes). Broil (or grill) for a further minute to brown on top. Top with the remaining Castello Blue Cheese Crumbles and chives. Serve with Castello Havarti and/or Gouda Cheese Crisps, vegetable sticks, and tortilla chips.
