Castello Apple Gouda Quesadillas

Castello Apple Gouda Quesadillas

Ingredients

  • 2 apples (Granny Smith or Pink Lady), cored and sliced
  • 4 large burrito tortillas
  • ¼ cups sugar
  • 1 tsp cinnamon
  • ⅓ cups chopped walnuts
  • 12 oz Castello® Gouda Cheese, shredded
  • 2 tbsp butter, melted

Preparation

In a small bowl, mix the cinnamon and sugar and set aside.

Preheat a large nonstick skillet over medium-medium high heat.

Brush one side of the tortilla with melted butter and then flip the tortilla over. On one half of the other, non-buttered side of the tortilla, layer Castello Gouda Cheese, apple slices, cinnamon sugar mixture, walnuts, and then another layer of Castello Gouda Cheese. Fold the other half of the tortilla over to make a semi circle.

Transfer the quesadilla to the skillet and cook for about 5 minutes on each side until the cheese is melted on the inside and the outside is toasted golden.

Remove from the skillet, cut into triangles, and enjoy warm.
