3½ oz gherkins
12¼ oz Castello® Extra mature cheddar, diced
2⅘ oz pickled beetroot
1¾ oz cleaned frisée lettuce salad
2 tbsp olive oil
1 tbsp apple vinegar
salt
black pepper
Serve with:
bread
4 tbsp coarse grain mustard

Preparation
Place the Extra mature Cheddar on a platter with gherkins, pickled beets and duck rillettes.
Toss the salad with oil, vinegar, salt and pepper. Arrange the salad on a dish.
Serve with bread and mustard.
