Cream Cheese Sandwich with a Mexican Touch

Ingredients

1 Castello® Green & Red Bell Pepper Cream Cheese Ring 4.4oz
1 cooked chicken breast
4 slices bread, thickly cut
8 pickled red chili peppers, quartered
100 g sweet corn
1 small avocado
½ red onions, finely sliced
¼ red peppers, chopped
a few drops tabasco sauce sauce
2 tsp chilli sauce of your choice
fresh sprigs of ground coriander
1 tbsp lime juice
salt and pepper

Preparation

Toast the slices of bread on both sides.

Spread the chili sauce on all 4 pieces of toast.

Tear the chicken breast into small pieces and arrange on two of the slices.

Top the chicken with slices of Castello Piquant Cream Cheese, avocado and pickled peppers.

Toss together the sweetcorn, lime juice, red onion, chopped pepper and coriander.

Season with tabasco sauce, salt and pepper.

Cut the toasted sandwiches in half and serve with the spicy corn salsa.
