Blue Cheese with Berries and Walnuts

Wet walnuts:

  • 3½ ounces walnuts
  • ⅖ cup water
  • 6 tbsp honey
  • 1 vanilla pod
  • 1 tbsp lemon juice



1. Boil the walnuts for 2 minutes, remove from the water and let them dry.

2. In a pan heat water, honey, vanilla and juice and bring to a boil while stirring. When the honey is dissolved, add walnuts to the syrup and gently stir.

3. Let the wet walnuts rest overnight.

4. Rinse the blackberries and blueberries and cut the Castello® Traditional Danish Blue into slices – garnish with wet walnuts and a drizzle of syrup.
