Egg muffins with cheddar

Egg muffins
For the egg muffins: Lightly whip the cream cheese with the cream, then beat in the eggs. Add the grated Extra Mature Cheddar and salt.
Line 8 greased muffin cups with the turkey slices, then fill with the egg mixture.
Bake the 8 muffins in the middle of the oven for 20-25 min. at 400°F (conventional oven), then cool in the pan. Carefully remove them from the pan.
Combine the red onions and lettuce in a bowl. Add the cress, then gently toss with oil and pepper. Serve with the warm muffins.
