Honey apple rings with walnuts and Castello® Double Crème White

Apples and cheese are here to please - our recipe for Honey apple rings with walnuts and soft white cheese is keeping things light. Sweet and sour apple slices, creamy cheese, crunchy and bitter walnuts and aromatic honey make this a delicate, perfectly balanced bite full of interesting textures and lovely flavours.

ingredients

  • 2 apples (preferably slightly sour)
  • juice of half a lemons
  • 1 oz Castello® Double Crème White
  • 3½ ounces walnuts
  • fresh thyme
  • 2 - 3 tbsp honey

preparation

1. Cut the apples in thin slices and remove the core.

2. Put the apples in ice water with the lemon juice for 10 minutes. This will help to keep the apples crisp and make sure they don’t oxidize and turn brown.

3. Remove the apples rings from the water and let them dry on a towel.

4. Add a slice of Castello® Double Crème White to each apple ring, and finish with walnuts and a drizzle of honey.
