Potato Blue Cheese Frittata

The only thing that beats an omelette on a weekend morning is frittata! Frittata is an Italian dish that’s perfect for using up leftovers. But it’s also amazing in its simplest form. This version is made with fresh produce like sweet onions, crunchy walnuts and fresh, crisp radishes, all of which go perfectly with Castello Traditional Danish Blue Cheese. The subtle flavors are all beautifully captured in the potato and egg mixture.

1. Preheat the oven to 400°F.

2. Chop the onion and grate the potatoes coarsely. Sauté them in an ovenproof frying pan. Reduce to medium heat.

3. Beat the eggs with some salt and pepper. Pour the mixture over the onions and potatoes.

4. When the bottom has set and the top is almost set, top with small pieces of Castello Traditional Danish Blue Cheese.

5. Put the pan in the oven and bake for approx. 10 min. until the top is golden brown and the cheese has melted.

6. Top the frittata with a handful of walnuts, sliced radishes and chives.
