
Savory brioche french toast with Aged Havarti, sautéed cherry tomatoes and oregano

Ingredients
Tomato topping:- 3 cups cherry tomatoes, cut in half
- 2 tbsp olive oil
- 1 tsp chopped fresh oregano
- 1 tsp balsamic vinegar
- salt to taste
- pepper to taste
- 2 cups milk
- 2 eggs
- ¼ cups grated parmesan cheese
- salt to taste
- pepper to taste
- 1½-inch thick 6 slices brioche, egg bread or jalapeño Italian bread
- 2 oz Castello® Aged havarti, shaved
Preparation
Prepare the tomatoes:1. Prepare the tomatoes: Sauté the tomatoes in the olive oil over medium high heat. Add the oregano and vinegar and cook until softened, about 3 minutes.
2. Season the mixture with salt and pepper and set aside, keeping warm until ready to serve.
French toast:3. French toast: Whisk the milk, egg, parmesan, salt and pepper in a shallow pan.
4. Press out circles from the bread using a cookie cutter (3-inch cookie cutter). Dip the bread in the milk mixture and pan fry in a hot non-stick for 3 minutes per side.
5. Transfer the toast on serving plates and top with the tomato mixture. Cover the tomatoes with shaved Castello® Aged Havarti.
