Savory brioche french toast with Aged Havarti, sautéed cherry tomatoes and oregano

Ingredients
Tomato topping:
3 cups cherry tomatoes, cut in half
2 tbsp olive oil
1 tsp chopped fresh oregano
1 tsp balsamic vinegar
salt to taste
pepper to taste
French toast:
2 cups milk
2 eggs
¼ cups grated parmesan cheese
salt to taste
pepper to taste
1½-inch thick 6 slices brioche, egg bread or jalapeño Italian bread
Preparation
Prepare the tomatoes:
Prepare the tomatoes: Sauté the tomatoes in the olive oil over medium high heat. Add the oregano and vinegar and cook until softened, about 3 minutes.
Season the mixture with salt and pepper and set aside, keeping warm until ready to serve.
French toast:
French toast: Whisk the milk, egg, parmesan, salt and pepper in a shallow pan.
Press out circles from the bread using a cookie cutter (3-inch cookie cutter). Dip the bread in the milk mixture and pan fry in a hot non-stick for 3 minutes per side.
Transfer the toast on serving plates and top with the tomato mixture. Cover the tomatoes with shaved Castello® Aged Havarti.
