SCOTCH PANCAKES WITH PINEAPPLE CREAM CHEESE & FRUIT

Ingredients

For the pancakes

200 g flour
200 ml milk
30 g icing sugar
1 tsp baking powder
1 egg
pinches of salt
vegetable oil for frying

For the topping

6 - 8 slices of Castello® Pineapple, Almond & Papaya Cream Cheese 4.4oz
3 - 6 strawberries (sliced)
1 banana (sliced)
1 - 2 tbsp coconut flakes
maple syrup

Preparation

Mix the flour, baking powder, sugar and salt.

Beat the egg and milk in a separate bowl, then add it to the flour mix.

Heat a non-stick pan and add some oil.

Use a large spoon to add 1 scoop of batter to the pan for each pancake.

Fry for 1-2 minutes on each side, until golden.

Once the scotch pancakes are ready, serve them with a few slices of Castello Pineapple & Almond Cream Cheese, strawberry, banana and coconut flakes. Top with a dash of maple syrup.
