Smoked Gouda and Smoked Havarti Mac and Cheese

1. Bring a large pot of salted water to a boil and cook the pasta until al dente, then drain and set aside.

2. In a large skillet or saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for a minute or two until it forms a smooth paste.

3. Gradually whisk in the milk, stirring constantly to avoid lumps, and cook until the mixture begins to thicken.

4. Stir in the cream cheese until fully melted and smooth.

5. In a separate skillet, cook the pancetta over medium heat until crisp, then drain on paper towels.

6. Add the shredded Smoked Gouda and Hickory Smoked Havarti to the milk mixture, stirring until the cheese is fully melted and creamy. Season with the kosher salt and dried mustard. Fold in the cooked pasta and pancetta, stirring until everything is well coated in the cheese sauce. Serve warm, optionally topped with extra cheese or chopped chives.
