1. Roast the walnuts in a frying pan as it helps to release their flavor.
2. Add salt, thyme and honey.
3. Let the honey warm through, because it also helps absorb the flavors of nuts and thyme.
4. After about 5 minutes, pour the mixture on glasses.
5. You can vary the nuts to your liking, but walnuts have an acidity and bitterness that go exceptionally well with blue mold cheese.
