1. Roast the walnuts in a frying pan as it helps to release the flavor.
2. Add salt, thyme and honey.
3. Let the honey warm through, because it also helps absorb the flavors of nuts and thyme.
4. After about 5 minutes, add the mixture on glasses.
5. You can of course vary the nuts to your liking, but walnuts have a bit acid and bitterness which goes exceptionally well with blue mold cheese.
