    Castello® Creamy Blue Cheese begins its journey in Denmark, where fresh cow's milk and cream are combined with hand-added cultures, creating this cheese's signature creamy base. Each cheese is then carefully pierced in a distinctive star pattern, encouraging the blue mould to grow evenly throughout and giving the cheese its characteristic marbling.

    This technique is inspired by a desire to combine the mild, delicate nature of brie with the more intense profile of traditional blue cheeses, resulting in a soft, creamy mould cheese which captures the best of both worlds.
