Green chimichurri

Herby (Fresh) Garlic/Onionish

ingredients

  • 10 sprigs parsley
  • 3 sprigs mint
  • 2 sprigs oregano
  • 100 ml olive oil
  • 50 ml pale vinegar, preferably sherry vinegar
  • 1 garlic clove, peeled
  • ½ red chilli
  • 2 pinches salt
  • 1 shallot

preparation

A spicy sauce that goes with pretty much anything grilled. Use the herb sprigs in their entirety as there is just as much flavour in the stalks as in the leaves.
