Spinach pesto with Extra Mature Cheddar

  • 50 g almonds
  • 250 g fresh spinach
  • 50 g Castello® Tickler Extra Mature Cheddar
  • 1 garlic clove
  • olive oil
  • lemon juice
  • salt
  • pepper


Rinse the fresh spinach leaves and add to blender with almonds, garlic and Castello Tickler Extra Mature Cheddar. Pulse lightly to blend, and gradually add the olive oil to get a slightly chunky texture without puréeing the pesto. Season with lemon juice and salt and pepper.
