Caramelized Onion and Gouda Tart
Ingredients
- 6 oz Castello® Gouda Cheese
- 2 sweet onions, sliced thin
- 2 tbsp butter
- 1 tbsp balsamic vinegar
- 2 tsp fresh thyme
- 1 frozen puff pastry sheet
Preparation
1. Preheat the oven to 400° F and line a baking sheet with parchment paper.
2. In a large skillet, melt the butter over medium heat. Add the sliced onions and cook slowly, stirring often, until they become golden and caramelized. This will take 30-40 minutes.
3. Stir in the balsamic vinegar and fresh thyme, cooking for another minute until fragrant.
4. Remove from heat and let cool slightly.
5. Roll out the puff pastry sheet on a lightly floured surface to smooth any creases, then transfer it to the prepared baking sheet.
6. Using a sharp knife, score a border about half an inch from the edges of the pastry, being careful not to cut all the way through. Top with slices of gouda cheese and spread the caramelized onion mixture evenly within the scored border.
7. Bake until the pastry is puffed and golden and the cheese is melted and bubbly. Let rest for a few minutes before slicing and serving warm.
