1. Slice red onion thinly and toss with vinegar and a pinch of salt and freshly cracked pepper. Set aside.
2. Place Castello Chive and Spring Onion Cream Cheese onto a plate or in a bowl. Using the back of a fork gently mash the cream cheese to soften and evenly incorporate the herbs.
3. Lightly toast bagels, then schmear over softened cream cheese on each side, top one side with smoked salmon, pickled onion, dill and capers. Close the bagel and cut in half to enjoy right away or pack for later.
Serving note: Serve all the ingredients on a board as a brunch buffet style. Leave the Castello Chive and Spring Onion Cream Cheese as a whole wheel for decoration.
