Bagel with Smoked Salmon & Castello Chive and Spring Onion Cream Cheese

"Bagels are a classic that will be around forever, but every now and then they have a surge in popularity. The truth is, they should be in your regular recipe rotation because they are so easy, impressive and incredibly delicious. Whether you make one for yourself or want to create a delicious brunch spread for friends, the key is to keep things simple. A good quality bagel is a must. I like everything bagels as they have so much flavour and crunch. Then the most important part, the cream cheese schmear. Really you can eat a bagel with just a good schmear, and my go to is Castello Chive and Spring Onion Cream Cheese! It’s creamy, smooth and has the perfect amount of herby flavour for a bagel. From there you can add whatever toppings you like. My favourites are some lightly pickled onions, smoked salmon and capers" - Samantha Jakubiak

  • 125 g Castello® Chives & spring onion cream cheese
  • 2 bagels
  • 150 g smoked salmon
  • ½ small red onion
  • 1 tbsp white wine vinegar
  • 2 tbsp caper in brine
  • 1 sprig dill
  • sea salt and freshly cracked pepper


1. Slice red onion thinly and toss with vinegar and a pinch of salt and freshly cracked pepper. Set aside.

2. Place Castello Chive and Spring Onion Cream Cheese onto a plate or in a bowl. Using the back of a fork gently mash the cream cheese to soften and evenly incorporate the herbs.

3. Lightly toast bagels, then schmear over softened cream cheese on each side, top one side with smoked salmon, pickled onion, dill and capers. Close the bagel and cut in half to enjoy right away or pack for later.

Serving note: Serve all the ingredients on a board as a brunch buffet style. Leave the Castello Chive and Spring Onion Cream Cheese as a whole wheel for decoration.
