These beetroot patties are a great vegetarian alternative to the meat in a burger. They taste delicious and with the rich and earthy flavour and texture of the beetroot you won’t miss the beef!

Beetroot patties with Castello® Greek Style cheese cubes

Ingredients

4 servings
4 large beetroots (600 g), roughly grated
2 onions roughly grated
3 eggs
2 tbsp psyllium husk powder or 100 - 150 g plain flour
1 handful fresh mint, chopped
1 tsp salt
black pepper
butter for frying

Preparation

Preparation

Place the grated beetroot and onions in a bowl with the eggs and mix thoroughly. Add the psyllium husk (or flour) and mix again.

Add salt, pepper, Castello® Fetta cheese and fresh mint and mix to combine.

Heat a frying pan on medium heat and add a large dollop of butter. Use your hands to shape the beetroot patties.

Fry the patties on each side for 5-10 min., depending on thickness, until golden and set.
