Chargrilled Vegetables with Citrus and Herbs Fetta

Smoky Garlic/Onionish


  • 200 g Castello® Citrus and Herbs Fetta
  • 1 green zucchini, cut into thick slices
  • 2 yellow capsicums, cut into wide strips
  • 4 tomatoes, cut in half
  • 4 red onions, cut in half
  • 1 large garlic clove, finely chopped
  • 1½ tbsp fresh thyme leaves, finely chopped
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • freshly ground pepper


1. Grill the vegetables on all sides on a hot barbecue or grill. Allow five minutes for the tomatoes and about 10 minutes for the other vegetables, or until they are tender and have nice caramelised grill marks.

2. Alternatively, roast them for about 10 minutes in a very hot oven. Mix the garlic, thyme, oil, salt and pepper together and pour it on top of the grilled vegetables.

3. Carefully add the Castello® Citrus and Herbs Fetta on top of the hot, grilled vegetables. Give the mixture a gentle toss and serve immediately.
