
Fresh cauliflower, lime and blueberries
A fun and fragrant side salad – our recipe for Fresh cauliflower, lime and blueberries is bound to bring out some smiles at your dining table. The crunchy cauliflower and pumpkins seeds, sweet blueberries, aromatic coriander and a zesty lime dressing will complement both fish and meats - with the right seasoning.
ingredients
- 1 dl organic whipped cream 38%
- 4 tsp freshly squeezed lime juice
- ½ tsp coarse salt
- ¼ tsp freshly ground pepper
- 40 g pumpkin seeds
- 300 g cauliflower
- 100 g fresh blueberries
- 1 tsp finely grated lime zest, unsprayed
- 1 tbsp fresh coriander
preparation
Preparation1. Combine the cream, lime juice, salt and pepper. Cover and refrigerate for about 10 min.
2. Toast the seeds in a frying pan over a high heat for about 1 min., stirring constantly. Toast them for an additional 2 min. over a medium heat, continue stirring. Place the seeds in a bowl.
3. Cut the cauliflower into thin slices (use a mandolin slicer, if you have one). Arrange the cauliflower in a large dish and marinate in the cream dressing.
4. Sprinkle with blueberries, lime zest, coriander and pumpkin seeds.

Tips & tricks
You can substitute broccoli for the cauliflower for a more colourful salad.
