
Pineapple & Mango Salad with Castello® Greek Style Cheese

Make salad the hero of your meal by using other ingredients than the traditional, tomato, lettuce and cucumber. This salad is packed with flavors from mango, grilled pineapple and chilli and it gets crunch from the nuts and creaminess from the Castello® Greek Style Cheese Cubes.
ingredients
- 2 packs Castello® Marinated Greek Style Cheese in Oil with Garlic and Herbs 265g
- 60 g macadamia nuts
- 1 pineapple, cored and sliced
- 1 mango, sliced
- 1 red onion, diced
- 1 lime fruit, zest and juice
- ½ red chilli, chopped
- 1 garlic clove, crushed
- 2 cups chives, chopped
- salt
- pepper
preparation
Preparation1. Roast the macadamia nuts in an oven at 180°C for 5 minutes.
2. Grill the pineapple slices shortly on each side and dice.
3. Bring in the Castello® Greek Style Cheese and mix with the rest of the ingredients.
4. Toss all ingredients together in a bowl, and season to taste with salt and pepper.

Tips & Tricks
If you can't find macadamias, try substituting cashews.
