Comfort food in a flash. Our stuffed Sweet Potatoes are stuffed with smoked bacon, sauteed broccolini and the new zesty Castello Greek Style Cheese with Garlic and Herbs!

Sweet Potatoes stuffed with Castello® Greek Style Cheese, Bacon and Brocolli

Ingredients

2 tbsp olive oil
4 sweet potatoes
8 4 rashes smoked bacon
450 g broccoli or broccolini, halved horizontally
2 garlic cloves, crushed
½ tsp dried chilli flakes
185 g Castello® Marinated Greek Style Cheese in Oil with Garlic and Herbs

Preparation

Pre-heat your oven to 200˚C / 180˚C fan.

Season the sweet potatoes, drizzle with oil then bake on the middle shelf for 40 minutes.

After 30 minutes, start preparing the topping. Using a non-stick frying pan, fry the bacon over medium heat for 30 seconds, then add the broccoli and stir-fry for one minute.

Cover the pan and cook for 3 minutes then add the crushed garlic and chilli. Stir-fry for 30 seconds and cook uncovered for another 3 minutes.

Remove the sweet potatoes from the oven and cut each along its middle. Load with the broccoli and bacon mix, and top with Castello® Greek Style Cheese cubes.
